Hand picking of the grapes; soft crushing. White vinification with soft pressing, occurs without added sulphites and becomes sparkling through natural fermentation in the bottle. It is presented “with the bottom”, that is, with the sediment represented by the natural yeasts of the wine.

The residual sugar ranges from 5 to 12 g/l and is, on average, in the 7-10 g/l range.

Serve at 6-8 °C
A good sparkling white wine with sediment, unfiltered and with a more rustic and complex taste, it pairs well with cured meats, fresh cheeses and traditional Venetian dishes such as soppressa or herb omelette. Also excellent with blue fish or fried dishes, thanks to its lively acidity and dry finish.
