Our Company
The family-run Al Palaz di Spagnol Ires winery is located in Guia, a hamlet of Valdobbiadene. Together with her partner Danilo and daughter Alessandra, she continues the winemaking tradition begun by her father, Eni, and later continued by her brother, Eris.
The raw material used to produce our final product is Glera grapes, processed using traditional techniques and technological innovations.
Our Way
Our principles are based on a fair relationship between the land and its products, against the total exploitation of the soil and the creatures that inhabit it, including ourselves as social entities.
Sales are direct, made at the winery or by courier to shorten the supply chain. Our products can be tasted on site.
The processes adopted both in the vineyard and in the winery are carried out with respect for the terroir and the surrounding nature.
Vineyard treatments are carried out following and respecting the guidelines of the Conegliano Valdobbiadene Prosecco D.O.C.G. viticultural protocol, striving to be as minimally invasive as possible on the surrounding landscape.
Weedkillers/desiccants or chemical fertilizers are not used. Mowing is done by hand, as is pruning (double inverted pruning) and harvesting (in bins transported on a trailer).
Pressing is gentle with pneumatic presses. Fermentation is skinless with the addition of sulfites. It takes place in temperature-controlled steel tanks. When the alcohol content reaches 9.8%, the wine is chilled and filtered. It is kept at a low temperature until the second fermentation, which takes place in an autoclave for secondary fermentation.
This process takes 40-50 days and is regulated in terms of both temperature and pressure. Under optimal conditions and in compliance with legal parameters, the temperature is lowered below freezing, stabilized, microfiltered (physically, not chemically), and bottled with natural corks. We use GMO-free native yeasts for fermentation.

Our Vineyards: La Muliana
All the vineyards of the Al Palaz Winery are located in the restricted Valdobbiadene D.O.C.G. zone, more precisely in the hamlet of Guia.
Each of these has a unique name that recalls the toponymic and geological history of the area: Col, Belussi, Cordeta, Muliana, Riva Granda.
The Al Palaz Winery produces a variety and limited quantity of wines that showcase the specific characteristics and qualities of each vineyard.
During September, the harvest is carried out strictly by hand, given the rugged terrain and the geology of the vineyards.
We love Guia and our origins. Every year in Guia, in the spring, an exhibition recounts the territory and its history, showcasing the D.O.C.G. products of the Treviso area up close.
By following marked paths and trails, you can experience the unique features of this small village up close, retracing its history through the beauty it has to offer.
The little church of Guia is undoubtedly an essential stop, both for its architectural significance and for the importance it has had over the centuries in shaping the identity of this Treviso village.
